If you mean you want to apply a temperature condition for material
properties but not include the thermal expansion effects, you can use the
command THEXPAND,OFF. I don't know if it's available in Workbench, so you
might need a command snippet.

I'm using Mechanical for a static structural analysis that has no thermal
loads applied to the ANSYS model. But in Engineering Data, I have defined
material properties that span an entire temperature range. Is there a way
to tell Mechanical to use material properties only at a certain temperature?
In other words, suppose I define material properties in Engineering Data,
spanning 0°F through 500°F, and my model does not have any thermal loads
actually modeled upon it. Is there a way to tell Mechanical to use the
material properties only at 400°F? (i.e., I want it to pull Young's and
Poisson's only at 400°F)
