As far as my understanding goes, ANSYS only calculates nodal displacement. So, I'm thinking that nodal stresses by definition must be averaged somehow.

If you're interested in different representations of nodal stresses (averaging techniques) you might be interested in the difference between /graphics,power and /graphics,full (see documentation)
About full graphics:

Use /graphics,full in post1 to average the way post26 is doing:
full - average from all elements attached to a node power - average (1) only those elements with a face on the surface (i.e., ignore elements with just a node on the surface), (2) if at material or geometric discontinuity, separately average (so you have in fact two or more values at a node). power leads to more accurate numbers. If the mesh is fine enough, both methods will lead to the same value.
